This is a 10 lb bulk pack of 85% cacao Extra Bitter-Sweet organic dark chocolate. It is surprisingly smooth and well textured and not as bitter as you would expect from an 85%. It works well in all baking applications. There is a powerful chocolate flavor and depth but it still blends well in any recipe that calls for chocolate chips.
The chocolate is made Bean to Chip at source in Peru, which allows us to use newly harvested fresh cocoa beans. Doing this we can lock in the fresh flavor rather than shipping the beans half way round the world and having them age and deteriorate before getting processed into chocolate.

Pungent, real, unadulterated quality chocolate chips. Yes, pricy (my family did score a discount which is why we went for it), but just what we wanted this year for special holiday baking and the little moments of guilt-free personal chocolate fulfillment in between. It was still warm outside in KS when the chocolate shipped and thanks to good packing, the product made it safely. We did have to dry the Pascha cardboard box (inside Amazon box) separate from the plastic bag containing the baking chips; as the cold packs had released condensation in shipping. Serious baker here and the purchase was worth it and will last us a while.
